Baijiu is China's national spirit, typically 38-65% ABV. It smells intense and tastes even more so — many foreigners are "shocked" by their first sip. But quality baijiu is smooth on the palate with a long finish.

四大香型 | Four Major Aroma Types: - 酱香型 — 茅台是代表。味道复杂、层次丰富。Sauce-aroma — Maotai is the icon. Complex, layered flavor. - 浓香型 — 五粮液、泸州老窖。最受欢迎的香型，甜香浓郁。Strong-aroma — Wuliangye, Luzhou Laojiao. Most popular type, rich and sweet. - 清香型 — 汾酒。口感清爽干净，最适合入门。Light-aroma — Fenjiu. Clean and crisp, best for beginners. - 米香型 — 桂林三花酒。用大米酿造，口感偏甜。Rice-aroma — Guilin Sanhua. Rice-based, slightly sweet.

黄酒入门 | Huangjiu Basics

黄酒是中国最古老的酒（3000年历史），酒精度14-20度。绍兴黄酒最有名——女儿红和花雕酒都是绍兴黄酒。温热后喝风味更佳，可以加几颗话梅。

Huangjiu is China's oldest alcohol (3,000 years), 14-20% ABV. Shaoxing huangjiu is most famous — Nü'er Hong and Huadiao are both Shaoxing varieties. Best served warm; add a few dried plums for extra flavor.
